Masala Majjige | Spiced Buttermilk

Masala meaning spices and Majjige is buttermilk. Spiced or not buttermilk is simply called as Majjige. Just to differentiate plain buttermilk with spiced I added the word Masala. Majjige or buttermilk is traditionally consumed plain with everyday meals. The spices, salt, and water is added to Majjige or buttermilk to make spiced buttermilk. Sometimes, this is also called as Majjige tambli.

 

Even if you drink plain or add just water and salt, there is no better drink like a glassful of this classic, cooling, and refreshing Majjige or buttermilk in summers. Making Majjige or buttermilk takes time. But making spiced buttermilk is simple, quick, and easy.

A note on Majjige or buttermilk

Traditionally, the curd is churned till the butter separates and the remaining liquid is the buttermilk or Majjige. And, the curd is cultured full-cream milk. Homemade buttermilk is thick to very thick and consumed during every day meal either by mixing with plain rice or as a beverage. Butter is removed from the buttermilk and consumed as-is as a side dish with tellevu / dose, rotti / roti etc., or ghee (clarified butter) is made out of it. Manually or by machine, the tradition of making Majjige at home still exists in many households.

Ingredients

  • 3 cups Majjige or buttermilk

  • 2 cups water or as required
  • 1 teaspoon cumin seeds (jeerige or jeera)
  • 1/2 teaspoon salt or as required
  • 1 to 2 inches ginger (shunthi or adarak)
  • 1 tablespoon chopped coriander leaves (optional)

Instructions

  • Take 3 cups Majjige or buttermilk in a bowl.
  • Add 2 cups water.
  • Add salt as required and mix well.
  • Take 1 teaspoon cumin seeds, rinse if not cleaned and dried earlier, crush them to fine powder.
  • Add cumin seeds powder to the buttermilk. Mix well.
  • Take a piece of ginger. (1 to 2 inches)
  • Crush it.
  • Squeeze the crushed ginger juice into the buttermilk. Mix well.
  • Take coriander leaves and chop them.
  • Add chopped coriander leaves to the buttermilk and mix well.
  • Serve or consume fresh spiced buttermilk.

Step by step guide

How to make spiced buttermilk

1. Take 3 cups Majjige or buttermilk in a bowl.

2. Add 2 cups water.

Add water as required depending on the thickness of the buttermilk, or / and how thick or thin you want the drink to be.

3. Add salt as required and mix well.

4. Take 1 teaspoon cumin seeds, rinse if not cleaned and dried earlier, crush them to fine powder.

5. Add cumin seeds powder to the buttermilk. Mix well.

6. Take a piece of ginger. (1 to 2 inches)

7. Crush it.

8. Squeeze the crushed ginger juice into the buttermilk. Mix well.

9. Take coriander leaves and chop them.

10. Add chopped coriander leaves to the buttermilk and mix well.

11. Serve or consume fresh spiced buttermilk.

Notes

  • Instead of ginger juice, you can crush the ginger to a fine paste and add.

  • Adding or garnishing with coriander leaves is optional. You can skip this if you would like to gulp the spiced buttermilk at one go.
